We are a family of dessert enthusiasts who want to better the world through cake.
We offer tips and tricks, we teach cake and cupcake decorating classes, and we offer programs for youth groups.
Many of our core memories need a tether, a physical item that reminds us of those good times. Cakes, or cupcakes are a prefect example of that tether and that is why they are so important. We want everyone to be able to have that tether and we hope to someday work with Family Services to ensure children without stable families are still receiving this basic part of pivotal celebrations!
"Icing Smiles is a nonprofit organization that provides custom celebration cakes and other treats to families impacted by the critical illness of a child. We understand that the simple things, like a birthday cake, are luxuries to a family battling illness. Our goal is to create a custom cake for the ill child, or their sibling, that provides a temporary escape from worry and creates a positive memory during a difficult time."
Professionals have ways to keep a cake from sticking to the pan, but for the average, at home, baker, parchment paper is a must have. Still use your usual butter or cooking spray but lining the bottom of a metal pan or cutting strips for using a bowl or shaped cake pan will reduce a lot of stress when it comes to removing your cake from the pan!
Picking what kind of cake to make and what icing is not always easy. For younger audiences, it's safest to go with the classics; chocolate and vanilla are familiar and don't challenge their tastebuds with something new. It's also worth noting that large amounts of food dye can affect children in unpredictable ways so using little to no food colouring is advised. For adults, it's easiest to ask, but generally, as long as the adults know what it is, they'll be alright with it, just be sure to let them know if there is anything crunchy, chewy or gooey so they aren't surprised!
Stacking cakes on top of one another is no easy task, and without the proper technique, you could end up with a mess and disappointment. Cutting food safe bamboo dowels the same height as your cake (insert and cut with designated clippers where icing ends) and inserting them in the bottom layer, under where the next tier will sit, will give you more stability, so will driving a dowel through the entire cake, but that's not always an option. Remember: Cake bases are required for tiered cakes!
